Sinful chocolate chip buckwheat oat cookies

Sinful indeed, lots of sugar, chocolate and butter makes these cookies all of which is usually not at all my style of baking. Very very delicious.

Sinful chocolate chip buckwheat oat cookies

This recipe was found by my hubby, I added my twist by replacing some of the flour with oat & buckwheat flour. I also cut down on the amount of nuts & chocolate. You can find the original recipe

Ingredients

200g sugar

1 tbsp vanilla sugar

225g chocolate chips or chopped up chocolate bar

100g roasted & chopped pecan/walnuts

2 pinches of salt

150g butter

100g oat flour (gluten free)

100g buckwheat flour

150g white unbleached spelt flour

1 tbsp baking powder

1 egg

  1. Begin by pre-heating your oven to 180 C.

  2. Using a blender/mixer place mix butter and sugar, till a soft white-ish cream consistency.

  3. Mix the dry ingredients in a bowl.

  4. Once the sugar and butter have reached the cream consistency add one egg, mix well.

  5. Slowly add the dry ingredients.

  6. Now add the chocolate and nuts and mix.

  7. You should end up with a thick sticky dough, see the above photo as reference.

  8. Now scoop out dough using a regular soup spoon and place on a baking tray with baking paper. Make sure to leave space between each dough ball so the cookies have space to spread out.

  9. Bake for 7-12 min in the middle of your oven.

  10. Allow to cool before you taste as they will be slightly dough-ish when they first come out.
