Real banana bread

OK, so I have been playing around a lot with the "healthy" versions of cake recipes, so far 50% turned out well and then other half terrible. So I decided for a brunch to just go with real sugar, butter etc to make a proper banana bread, only of course I had to use spelt flour instead of regular.

So here is one of my many banana bread recipes. For GF versions check out my website recipe section.

Ingredients

3,5 very brown bananas

90-100g unbleached sugar ( I like to use coconut or palm sugar)

2 eggs

250g spelt flour (or use half unbleached white + half whole wheat)

80-120g nuts (roasted and non-roasted hazelnuts, walnuts)

1 tsp cinnamon

1 tsp salt

3 tsp baking powder

80 gram melted cooled butter

2 tbsp coconut oil or un-toasted sesame oil

Instructions

1) preheat the oven on to 175 C.

2) begin by whisking the eggs and sugar stiff & white.

3) place all dry ingredients into a bowl and mix.

4) mash the bananas.

5) add the mashed bananas to the eggs + sugar - mix

6) slowly add the dry ingredients to the eggs & banana sugar - mix.

7) add the melted (cooled) butter and oil - mix.

8) place the mix into a bread form greased and dusted with flour to stop the cake sticking to the edges.

9) place the cake into the middle of the oven and allow to bake for 45min, then poke with a fork after 45min, it should come out dry (clean of batter) if not allow another 10-15min.

Enjoy as is or white some butter & a tiny drizzle of maple syrup ;)
