Creamy kale, walnut anchovy pasta

I know, this combo may sound dubious, but trust me it’s soooo good!

This is such a creamy, zesty, umami flavored pasta sauce made so quickly! 

Ingredients: 

5-6 kale leaves, stems removed, washed 

1 tin anchovies (6-8 anchovy filets) 

80g toasted walnuts (toast in a frying pan no oil, tossing regularly to avoid burning)

Juice and zest for 1 lemon 

1-2 garlic cloves 

100-120ml pasta water 

80g pecorino or Parmesan cheese 

Fresh pepper 

2 tbsp olive oil / butter 

1/2 tbsp sea salt - for pasta water 

Instructions: 

1- boil your pasta water adding sea salt. Once you add the pasta to the water also add the kale ontop, pushing it down to cover it. 

2- while the kale cooks, place all ingredients save the kale & pasta water in a blender. 

3- kale should cook for 2min, then remove with thongs from the pasta water, drain and add to the blender. 

4- add 100ml pasta water to the blender 

5- blitz till you have a smooth sauce. If the sauce is too thick add more water. 

6- drain pasta and mix with sauce 

Serve and enjoy!!
