Homemade Baked Beans

Sometimes, when I feel like an easy dinner solution, I make a breakfast dish for dinner. This is one of those…The nice thing is, it’s easy to make, comes together in under 40mintues and its relatedly kind to your budget too. 



Home made baked beans. My kids love it and I kinda do too. 



Ingredients: 

400g precooked white beans 

2x 400ml tomato passata 

1/2 tsp ground cummin 

1/2 tsp ground paprika 

1/2 tsp coriander seeds

1 medium yellow onion, diced 

Drizzle of avocado oil

1 medium sized sweet potato, peeled & diced into 1cm cubes  

2 tsp sea salt 

Fresh pepper 

Fresh herb: leaves from 2 sprigs of thyme or rosemary or a pinch of oregano 

To serve: 

Handful of fresh parsley/ chives chopped 

Drizzle of extra virgin olive oil (cold pressed) 

Crumbled feta / soft boiled egg / fired egg 

Toasted sourdough 

Instructions: 

  1. Fry the onion until soft & transparent - 2-3min

  2. Add the spices + salt and fry another minute

  3. Add there sweet potato & beans, cover in the spices (not the herbs)  

  4. Add the tomato passata 

  5. Allow to simmer for 30-40 minitues 

  6. Add the her of your choice 

  7. Serve with toasted sourdough bread perhaps a soft boiled egg or fried egg/ crumbled feta, sprinkle over some fresh parsley and a drizzle of good quality extra virgin olive oil
