Spelt Almond Pear or Apple Pie

This pie feel very satisfying to me, perfect as an afternoon treat or to round off a Sunday meal. Served with some vanilla ice cream, creme fraiche or whipped cream.

Heres what you need to make it;

Ingredients

Crust

100g (cold) organic grass-fed butter, cut into cubes

0.5 tsp sea or himalayan salt

200g spelt flour

1 medium organic egg

(1-2 tbsp cold water)

Filling

3 medium apples, peeled and thinly sliced

squeeze of fresh lemon juice

4 tbsp unrefined suger

1 medium organic egg

1 tsp cinnamon

100g almond ground almonds

pinch of sea salt

1 egg yolk

1 tbsp water

40g butter / ghee/ coconut oil

Instructions

  • Preheat your oven to 200C/ 392F

  • Using a food processor blend or your finger tips crumble the flour, butter, salt and sugar.

  • Now add the egg, mix to create a dough, if it feels dry add a little cold filtered water.

  • Roll the rough into a ball and then transfer to a 20cm diameter pie form and using your thumb press the dough out flat, to create the crust.

  • Place in the middle of the oven for 10-12min.

  • Place the peeled apple slices in a bowl, add the cinnamon, sugar and lemon juice and gently mix, to cover the apple slices.

  • In a food processor or a small bowl, mix the almond flour, butter, sugar, salt and egg yolk.

  • Once the pie crust has pre-baked and cooled add the almond filling to the bottom of the crust and then place the apple slices over the top.

  • Bake for 25-30min, until golden and the apples have cooked through.

Serve with vanilla ice-cream, whipped vanilla spiked cream or custard. Yum!
